Saturation
Saturation is the intensity of color: how far the colors sit from neutral grey. Zero saturation is black-and-white; high saturation makes colors scream. A little restraint reads as expensive and controlled; too much reads as amateur, and skin is where it shows first — over-saturated faces look sunburnt. Saturation is usually the last of the four basic controls you set, after brightness and neutrality are handled.
